More recipes...

I thought I'd share a few recipes. One easy the other- not so easy. ;) The first I'm going to share is one I got from my friend Kari. She had gotten it from her sister and I tried to remember what she had said was in it so I could copy it. I don't know if I used the same ingredients as Kari did, but I like the results even if I didn't. This is so good and easy. I'm sure it's not very 'low' fat though...

First- chop about 1/2 pound bacon and fry until crisp...

Chop up 3 cloves garlic or as much garlic as you'd like. I love garlic so this seemed about right to me...yum! After your bacon is crisp, drain and then add your garlic.

Boil about 1/2 to 3/4 of a box of bow tie pasta...

Grab a jar of Alfredo sauce and add to your bacon and garlic mixture. Let simmer for a few minutes. Okay, this smell is seriously intoxicating- it smells so good!

After your pasta is done- drain. Throw the pasta in a large bowel and add the sauce- enjoy! I paired this up with some fresh spinach. It was so good! The best part about it though was the simplicity of it. Here's a picture of the finished meal...

Now for my next recipe. This one wasn't quit as easy. It took allot of dishes and allot of steps. It looks so good though. We are going to some friend's house tonight and I said I would bring a dessert. I wanted something a little more original. I hadn't made or had a cheesecake for awhile so I went hunting on All Recipes and found this. I haven't tasted it yet, but it smells and look really good. I'll let you know what the reviews are later.


1 cup chocolate cookie crumbs (I used oreos)
3 Tablespoons white sugar
1/4 cup butter; melted
1 (10 ounce) package frozen raspberries
2 tablespoons white sugar

2 teaspoons cornstarch
1/2 cup water
2 cups white chocolate chips
1/2 cup half and half (I used fat free)
3 (8 ounce) packages cream cheese, softened (I used 1/3 the fat)

1/2 cup white sugar
3 eggs

1 teaspoon vanilla extract


1~ In a medium bowel, mix together the cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture in the bottom of a 9 inch spring form pan.

2~ In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to a boil, and continue boiling 5 minutes or until sauce is thickened. Strain sauce through mesh strainer to remove seeds.

3~Preheat oven to 325 degrees F. In a bowel over a pan of boiling water (simmering), melt white chocolate chips with the half-and-half, stirring until smooth.

4~ In a large bowel, mix the cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of the batter over crust. Spoon 3 tablespoons of the raspberry sauce over batter. Pour remaining batter into pan and spoon another 3 tablespoons raspberry sauce over the top. Swirl the batter with a knife.

5~ Bake for 55 to 60 minutes.* I cooked mine in a 'water bath'. I wrapped my pan in foil and then placed on a cookie sheet. I poured hot water into the cookie sheet. I read this is supposed to make a better cheesecake- we'll see. I also had to cook mine for about 1 hour and 20 minutes. I then let it sit in the warm oven for another 20 to 30 minutes.*

6~ Cool completely and then refrigerate for 8 hours or overnight in the pan. You can then remove the pan (first run a knife around the outer edge of the pan). Drizzle remaining raspberry sauce over each slice before serving.

10. WHAT IS YOUR FAVORITE CEREAL? I don't like cold cereal- I don't even care for breakfast foods.


12. DO YOU THINK YOU ARE STRONG? Nope- I'm pretty much a weakling. I am pretty strong when it comes to giving birth though. No pain meds with either my first or my last...yep...that's right and the first labor lasted 29 hours! The second was posterior though and I wasn't sure how long I'd be in labor (I mean c'mon 29 hours the time before!) so I got a shot of morphine. Boy, did it feel good! I was also on an epidural for 45 minutes. The midwife took me off of it before I pushed my big headed baby out though. So I was fully aware of 'that' pain...anywho...moving on.

13. WHAT IS YOUR FAVORITE ICE CREAM? Chocolate chip cookie dough. I rarely eat ice cream though because my stomach suffers for it afterwards.

14. WHAT IS THE FIRST THING YOU NOTICE ABOUT PEOPLE? If they look me in the eye when I talk to them. I can't stand it when people look everywhere else but at me when I'm talking to them. One thing my momma always taught me was to look people in the 'eye' when talking to them. Oh yeah, and to always give a good,firm handshake!

15. RED OR PINK? Hello! PINK!!!

16. WHAT IS THE LEAST FAVORITE THING ABOUT YOURSELF? Perfectionism... and my sensitivity...

17. WHO DO YOU MISS THE MOST ? My father- he died from ALS when I was 14.


19. WHAT COLOR PANTS AND SHOES ARE YOU WEARING? Blue, plaid PJ pants and fuzzy, white (well used to they are kind of grayish) slippers.

20. WHAT WAS THE LAST THING YOU ATE? A few grapes...literally a few...that was my breakfast. I told you I didn't care for breakfast!

21. WHAT ARE YOU LISTENING TO RIGHT NOW? Noah banging on the door upstairs. He's upset because he wants to be with his brothers and they apparently locked him out. =( Poor baby...


23. FAVORITE SMELLS? My husband and my babies. Seriously! They have such an intoxicating smell...! I also love the smell of goodies baking in the oven!

24. WHO WAS THE LAST PERSON YOU TALKED TO ON THE PHONE? My sis- Courtnie. Luke's coming home today! Yay!

25. DO YOU LIKE THE PERSON WHO SENT THIS? Nope...ha,ha...just kidding mom! Love ya!

26. FAVORITE SPORTS TO WATCH? Basketball- even though I never even watch that. We just don't do sports in this family.

Because I'm waiting for my pizza dough to rise...

and I have don't have anything else better to do. I saw this over on Brittany's blog and I thought I'd do it too. So, here are pictures of our fridge in all it's glory!

The front of our fridge- it contains pictures of friends and family. I mean c'mon what else to you put on your fridge, right?! I guess I could try and clean it up a bit...

I just decided...

I'm moving to Texas...I wish...! Out of curiosity I was checking out real estate in Texas and was shocked at how cheap it is compared to where we are living. You can get a super nice,new, good-sized house for 100k- here something for 100k would be an absolute dump! Literally- a dump! We'd be paying $200 less than what we are paying for rent- that's including taxes and insurance...! Plus, I have always dreamed of living in Texas- it's definitely my favorite state! Texans have a right to be proud of being a Texan! I would be too- if I was one. You all know how much I detest cold, Illinois/Wisconsin winter months so Texas just makes sense,right?! Unfortunately for us moving hubby's business just isn't feasible...yet. =( Sigh...I can dream can't I? Maybe,maybe (by some miracle) God will make my dream a reality someday. Anyway, that was my thought for the, I'll just mope around all day and wish I was living in Texas. No really,really, I am 'content' with where I am right now I just sometimes wish God would've planted mine and Tim's family in Texas to begin with. Or at least somewhere warm! ;)

Menu Plan Monday and best shot...

I haven't been making a whole lot of healthy meals lately because we have been so busy. Our bodies our screaming for some healthy, home-cooked food! We've been eating out way too much...because we have been on the road allot! I'm through with it! We are going to be eating at home all week this week! I'm going to be doing some serious grocery shopping today and later I'm coming home and making some more homemade bagels. Grandma is going to watch one or two of the boys so I can really shop! I detest grocery shopping but I'm actually looking forward to it today because I made a list! Plus, I'm going to be buying some new ingredients and trying some new recipes (the spaghetti squash and chickpea curry). Trying new things is always very exciting to me! I love experimenting in the kitchen! Plus, I love incorporating new, healthy foods to our diet. It just makes me feel good! Anyway, here is my list of meals for this week!

Monday~ Spaghetti Squash and toasted French bread.

Tuesday~ Lean Pockets (for me...healthy- I know...)- Tim's going to a men's Chili supper at church.

Wednesday~ Honey baked chicken, rice and corn

Thursday~ Meatloaf, green beans and baked sweet potatoes

Friday~ Roast chicken, potatoes and carrots

Saturday~ Garlic bacon pasta (so YUMMY) and a salad

Sunday~ Chicken Tacos

Monday~ Chickpea Curry and bread

A solution...

So, what do you do when the said dress below doesn't pan out? (This reminds me of a double amputee. I think it is the lack of the bottom part of the dress. Yep, I think that's it...)

You start fresh and make another dress! I whipped this up in 1 1/2 hours flat this morning- from the cutting to the finishing! Wowza- that's speedy (I was in a big hurry...)!

I'm pairing it up with my pink, corduroy blazer. I got it for $1 at Wal-mart a couple of years ago. Can't beat that with a stick now can you?

Of course, I had to show the shoes I'm wearing with it!

So, do you think it's 'funeralish' enough?

My suggestion for the day...

When a sewing pattern calls for stretch fabric- use stretch fabric! If not the dress you are in the process of making will NOT (in no way) go over your head. Not good- not good at all...sigh...

Today is my husband's 37th birthday so in honor of him I thought I'd share a post of pictures of Tim throughout his 37 years! There are quit a few so bear with me.
